Yummy Vegetarian Food!

As a vegetarian who’s not all that crazy for veggies, people ask me all the time, “Um, okay… so what DO you eat?”  Well… this would be a great example of a delicious side dish that I make for the whole family… but I eat it as my main dish.  If I have a nice green salad with this, it’s a pretty good, balanced meal for me.  My carnivorous family would have this alongside a nice juicy steak or some grilled chicken.

Rice & Lentils

Add 3/4 cup of dried lentils to a sauce pan of boiling water.  Boil for 10 minutes.  Drain off water and set lentils aside.  Melt 1 tablespoon butter in a large fry pan.  (Use olive oil if you’re vegan!)  Add one small chopped white onion.  Fry until golden.  Add in a couple of chopped cloves of garlic.  Add some salt and pepper, a teaspoon or two of ground cumin, and a dash of ground coriander.  Fry for a minute or two.  Add the lentils.  Add one cup of uncooked long grain rice.  Mix.  Add in two cups of water.  (If you aren’t a vegetarian, you could certainly use chicken or beef stock for more flavor.)  Cover with a nice tight lid and simmer at low heat for about 20 minutes…. till all the water is absorbed and the rice is tender.  Mmmmmm!  It’s kind of like a middle eastern style pilaf, and SO much better than a boxed side dish like Rice-A-Roni…. easy and impressive!

  1. Yum! I’ll have to try this when I get some lentils, oh and coriander and cumin! I’ll add it to my list.

    As we have an abundance of tomatoes that don’t look like they are going to redden, I tried a recipe for Fried Green Tomatoes. My stomach started to protest after the first mouthful, so I gave up eating it!
